Chicken Nacho's

Make as much or little as you want!

Spread tortilla chips on a baking pan
mix together cream cheese and jalapeno peppers (I used 4 oz and had about half a cookie sheet full of chips. Then I added about 2 TBS canned jalapenos-use more or less for your tastes) I warmed this up and put in a ziploc bag. Then I cut a hole in the corner and drizzled it all over.
Top with cooked, shredded chicken
chopped olives and diced tomatoes
Enchilada Sauce (I really like Rosarita's red sauce)
Sprinkle with grated cheese
Put in the oven on broil and cook till cheese is melted. Top with avocado and enjoy!

Casie's Swiss Steaks

4 to 6 Cubed Steaks
1 pkg. Durkee Swiss Steak Seasoning
1 can diced petite tomatoes
1 can cream of mushroom soup

Dip cube steaks in seasoning mix and brown in skillet. Place in 9x13 pan. Mix together the remaining seasoning and the tomatoes and soup. Pour soup mix over the steaks. Bake at 400 degrees for about 30 minutes, or until meat is done.

Comfort food on a chilly day

Stove Top Mac and Cheese*
Serves 4

Not for the faint of heart, this calorie laden treat, but boy oh boy . . . what a delicious way to go! Easy, uncomplicated and oh so tasty!

8 ounces macaroni
4 TBS butter
2 large free range eggs
6 ounces evaporated milk
1/2 tsp hot sauce
1 tsp salt
freshly ground black pepper
3/4 tsp dry mustard
10 ounces of sharp cheddar cheese, grated
Bring a pot of lightly salted water to the boil and then cook your macaroni according to package directions. Whilst the macaroni is cooking, whisk together the eggs, evaporated milk, hot sauce, salt, pepper and mustard in a large measuring cup. Once the macaroni is cooked drain well and then return to the pot.

Stir in the butter until it melts, then stir the egg mixture into the hot pasta. Add the cheese and cook and stir over low heat until the cheese is melted and the whole thing is nice and creamy. Serve hot.

Fudgy Pudding Cake - in a Crockpot

Fudgy Pudding Cake8-10

18-1⁄4-oz. pkg. devil’s food cake mix
3.9-oz. pkg. instant chocolate pudding mix
16-oz. container sour cream
3⁄4 c. oil
4 eggs
1 c. water
6-oz. pkg. semi-sweet chocolate chips
vanilla ice cream

• Beat first 6 ingredients at low speed with an electric mixer 30 seconds or until blended. Beat at medium speed 2 minutes. Stir in chocolate chips. Pour into a lightly greased 4-quart round slow cooker.
• Cover and cook on low setting 4 hours or until set around the
edges but still soft in the center. Turn off slow cooker and let stand 20 to 30 minutes; do not lift lid until ready to serve. Serve with vanilla ice cream.

1/2 cup butter or margarine
1 cup white sugar
1/4 tsp. Baking soda
1 egg
1/2 tsp. vanilla
1 1/2 cup flour
2 Tbsp. sugar
1 tsp. cinnamon


Mix butter, sugar, and soda. Beat in egg and vanilla. Add flour.

Roll dough into ball shape, and roll in extra sugar and cinnamon to coat the cookie. Bake at 350 degrees for 10 minutes. Tops will "crack" a bit upon removal.

Make one pan of cookies at a time, and chill the dough in between batches to make firmer cookie balls.
